Godot is just an engine in the toolbox - if we were to blame it for the quality of products produced that would be similar to blaming a lesser known brand of kitchen knives for not being used at any 5-star restaurants. In fact, being an open-sourced clone of Unity is probably the biggest reason anyone gravitates to Godot already - which means it's kind of a slim and niche audience that has to carry the engine into the spotlight anyways. Godot just has an uphill battle with competing in the market when other game engines are so popular already and offer conveniences that aren't available to an open-sourced engine like this. There are some limitations to the engine, as the case with any other, but I don't think they are what impedes the creativity and polish you're looking for - if that's what you are implying. Because not a lot of developers use Godot yet, compared to Unity or Unreal or GameMaker, and so the threshold of opportunity to create something of superb quality is a lot lower.
